The Wildcrafted Pantry is an invitation to slow down and build a pantry that takes care of you.

This course is about creating simple, fermented and preserved staples using ingredients you can find close to home — no specialty cultures, no online ordering, no complicated equipment. Just time, patience, and a few good jars.

Together, we’ll build foundational pantry items like berry ferments, honey-fermented flavours, wild sodas, preserved lemons— the kinds of quiet, powerful staples that transform everyday cooking and root us in older ways of taking care.

A way of paying attention. A way of keeping what matters. This course focuses on fruit ferments / wild sodas / preserved lemons / honey ferments (Lacto-fermented vegetables will be explored in a separate, dedicated course.)

Meet Your Guide

Lori McCarthy is a cultural steward, TED speaker, artist, and educator dedicated to a back-to-the-land philosophy that reconnects people with place.

Through her work, she explores how deep relationships with land, culture, and community foster belonging and resilience. Through Food Culture Place, Lori is committed to the preservation and revitalization of Crafts at Risk, as recognized by the Craft Council of Newfoundland and Labrador and Heritage NL. She integrates traditional skills into contemporary life, offering a grounded, place-based approach to cultural continuity. 

As a speaker, Lori inspires audiences to embrace curiosity, reciprocity, and shared values, highlighting the essential role of cultural heritage in individual well-being and strong communities.
